Description
Secret Safari Shiraz– Grapes are sourced from specially selected vineyards in the Swartland. They are picked at optimal ripeness and after destemming, the grapes were left in tank to cold soak of 48 hours before fermentation begins. Fermentation then takes place for approximately 7 – 10 days at 24 °C with one full rack and returns once a day for the first 2 days, followed by regular pump overs every day until dry. The juice is left on the skin for 4 – 5 days. Post fermentation the wine is racked off the grapes.
Secret Safari Shiraz showcases a mosaic of indulgent black fruit notes woven together with delicate spices, constructing a complex palate that culminates in enduring, velvety tannins.
